A Good Bread Recipe

Step 1
Mix together
    1 lb flour, it's best to weigh it, but that's about 3 cups
    1/4 teaspoon baker's yeast
    1 teaspoon salt
Add 1 1/2 cups water and stir in until dry ingredients are moistened. Don't knead. Cover with plastic wrap and allow to rest 8 hours or more.

Oil the sides of a Dutch oven and place parchment paper on the bottom.

Turn out on lightly floured surface and press down to remove some of the air then fold over to make a loaf. Place the loaf in the Dutch oven and allow to rest 2 to 2 1/2 hours. The dough should about double in size. Place the Dutch oven in a cold oven and turn heat to 450°f. Bake about 60 minutes.

On change

It's been a long time since I posted anything. It's partly from not being satisfied with my own writing. Though that never stopped me entirely. It's more because there hasn't been anything that I've been terribly excited about. Until now.

The world has changed. Change has come to Europe. Change has come for Greece. And we're all going to feel it. The ancien régime is gone. The Berlin Wall has fallen.

Viva Syriza. And what courage!

There is a lesson for us. Courage comes from conviction. And conviction from faith. Center on what you believe and act on it. Don't let anything stop you.

Bobbin Work Lace

I don't remember where we were.  Someplace between two other places.  We stopped at a castle that had been taken over by a local crafts group.  This woman was making bobbin lace.
